Chef Michael's Baby Potatoes in White Wine Sauce

Very tasty and fairly easy to make baby potato side dish. These potatoes go with just about anything. Except for pasta.

Ingredients

Vegtables

3 pounds Baby Pototes
1 large Onion (Chopped)
3 tablespoons Garlic (Minced)
2 pounds Mushrooms (Sliced)

Herbs and Spices

1 teaspoon Cilantro
1 teaspoon Basil
1/2 teaspoon Black Pepper

Milk and Dariy

1 Stick Butter (Salted)

Miscellaneous

2 cups White Wine
1 tablespoon Flour or Cornstarch

Chef Michael's Baby Potatoes in White Wine Sauce Directions

  1. Pour ½ a cup of wine into a measuring cup. Add in the flour or cornstarch. Using the back of a spoon slowly mash the flour or cornstarch into the wine. Make sure you get it all mixed in.
  2. On Medium heat, put 2 tablespoons of the butter into a large deep-frying pan. After the butter is melted add in the onions and garlic and Sautee until the onions are translucent then add in the mushrooms. Sautee until the mushrooms are soft. DO NOT USE A NONE STICK PAN.
  3. When the mixture is done Sautéing, add in the White Wine mixture. Mix it a little at a time then add in the remainder of the White Wine 1 ½ cups
  4. Using a spatula or cooking spoon rub DO NOT SRCAP the bottom of the pan to get what is stuck to the bottom of the pan off. (This adds flavor the sauce.)
  5. After you have gotten most of what was stuck to the pan off add in all the remaining ingredients including the potatoes.
  6. Let simmer until the potatoes can be easily split with a fork.
