I came up with this recipe on the spur of the moment. Needless to say they are delicious.

24 Medium White Mushrooms (6-8 per 10 oz. package)
2 LB Broccoli (With Stems)
1/4 Cup Feta Cheese
1/4 Cup Bread Crumbs (Italian Seasoned)
1 LB Bacon

Chef Michael's Broccoli Stuffed Mushrooms Directions

  1. Steam broccoli for 45-60 minutes.
  2. Cut bacon into 1/4" slices across package. 
  3. Cook bacon while broccoli is steaming. Drain well after it is done cooking.
  4. Clean mushrooms.
  5. When broccoli and bacon are both cooked and drained combine broccoli, bacon, cheese, and bread crumbs.
  6. Stuff mushrooms
  7. Bake at 375° Degrees for 30 minutes.

Recipe notes

Special Notes:

1. Make sure you clean your mushrooms thoroughly. Make sure you remove all the gills. (pores)

2. Make sure you mash up broccoli completely. (No chunks or large pieces.)

 

You can substitute pork bacon for turkey bacon.

You can also substitute Feta Cheese for Romano Cheese.

 

Serving size is 3 mushrooms per person for medium size.

If you use large (palm sized mushrooms) only 1 per person.
