Meat

1 Pound Bacon (Frozen)

Fruits and Vegetables

1 Pound Lentil Beans
2 Pounds Carrots
4 Tablespoons Garlic (Minced)

Herbs and Seasoning

1 Teaspoon Black Pepper
1 Tablespoon Celantro

Pasta

1 Pound Ditalini (No.45) Pasta

Other

2 Cups Beef Stock
4 Quarts Water

Chef Michael's Lentil Soup Directions

  1. Wash lentil beans thoroughly in cold water. Make sure to pick out any foreign objects that do not belong in the beans.
  2. Cut bacon into pieces approximately ¼" wide.
  3. Cut carrots into pieces approximately ¼-½" wide.
  4. Place beans into an 8-quart stockpot.
  5. Add water and beef stock.
  6. Add in Bacon, Black Pepper, Salt, and Garlic.
  7. Bring soup to a boil. Then turn heat down to a simmer. (Low)
  8. Allow cooking for 3 ½ Hours.
  9. Add more water if needed.
  10. Approximately 40 minutes before serving add in carrots
  11. Approximately 15 minutes before serving add in pasta.

Recipe notes

I tell you to use frozen bacon for several reasons. The main reason being that frozen bacon is easier to cut up. 

You can use turkey Bacon in place of Pork Bacon

NOTE: The soup can become very thick. You can add more water to thin out as needed. 

 

If you choose to cook in a slow cooker, put everything in except for the pasta. Add, pasta in approximately 15-30 minutes before serving.
